Natamycin, also known as pimaricin. It is produced by fermentation of certain types of the bacterium streptomyce,it is nearly white or creamy yellow crystalline powder. It is a odorless, tasteless, low dose and high safety food preservative.
Natamycine (E235) is a natural anti-fungal product which is produced by a pure culture of Streptomyces spp. following a strictly controlled fermentation process. Natamycine inhibits not only the growth of various moulds and yeasts,but also the production of their toxins. Natamycine can greatly extend the shelf-life of cheese, baked food, meat and beverage products.
