Anhydrous citric acid is a white crystalline solid with a chemical formula of C6H8O7 It is the dehydrated form of citric acid, resulting in the removal of water molecules. This compound is soluble in water and has a molecular weight of approximately 192.13 g/mol.
The melting point of anhydrous citric acid is around 153-154 °C (307-309 °F), and it is relatively stable under normal conditions. It is commonly utilized in various industries, including food and beverage, pharmaceuticals, and cosmetics, due to its acidic properties and its role as a flavor enhancer and acidulant. Citric Acid anhydrous is mainly used in carbonated beverages, fruit juice beverages, lactic acid beverages and other refreshing beverages and pickled products. Citric acid, as a pH adjuster, can not only play a flavoring role, but also maintain its quality.
