Guar gum or guaran, a natural food additive derived from the endosperm of seeds from the guar bean which mainly grows in India and Pakistan.

It is commonly used as a thickener, emulsifier and stabilizer in ice cream with the European food additive number E412.

This ingredient is keto friendly, vegan, gluten-free and commonly used as a substitute of xanthan gum in food.

Guar gum is obtained from the endosperm part of Cyamposis tetragonolobus seeds after removing the skin and germ. After drying and grinding, water is added, pressure hydrolysis is carried out and precipitation is made with 20% ethanol. After centrifugation, the endosperm is dried and crushed. Guar gum is a nonionic galactomannanextracted from the endosperm of guar bean, a leguminous plant.

from the endosperm of Guar bean seeds after peeling and embryo removal, after cleaning, drying and crushing, adding

gum is generally white to light yellowish brown powder, nearly odorless, and has no other odor. It generally contains
75%-85% polysaccharide, 5%-6% protein, 2%-3% fiber and 1% ash. Guar gum powder can be fully hydrated in hot and
cold water to form a translucent solution. Guar gum has the highest viscosity after fully dissolving. Long time high
temperature treatment will lead to the degradation of guar gum itself and the decrease of its viscosity. Guar gum is the
most viscous natural gum which is insoluble in organic solvents such as ethanol. Guar gum solution is a pseudoplastic
fluid with non-Newtonian characteristics, and has a stirring effect. At the same time, it has good compatibility with inorganic salts.
