Potassium Sorbate is a high efficiency acid preservative that is widely used in the food and beverage industry to prevent the growth of mold, yeast, and other microorganisms. It is a salt that is derived from sorbic acid with Potassium Hydroxide (hydrate), and major components of its production are Crotonaldehyde & Acetic Acid (Please see chart below).

1. In Food Industry:
- Preservative: It inhibits molds and yeasts in many foods and hence prolongs their shelf life.

- Preservative: It is used in many care products to inhibit the development of microorganisms for shelf stability. Some manufacturers use it as a replacement of Parabens.
